Air-Fryer Fajita-Stuffed Chicken

Preheat your air fryer to 375°F (190°C) for about 5 minutes.

In a skillet, heat olive oil over medium heat. Add sliced bell pepper and onion. Sauté until softened, about 5 minutes. Stir in taco seasoning, salt, and pepper. Cook for another 2 minutes, then remove from heat.

Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through. Season the inside and outside of the chicken breasts with salt and pepper.

Stuff each chicken breast with the sautéed bell pepper and onion mixture, then sprinkle shredded cheese on top.

Use toothpicks to secure the opening of each chicken breast to keep the filling inside.

Place the stuffed chicken breasts in the preheated air fryer basket.  Cook for 18-20 minutes or until the chicken is cooked through and the cheese is melted and bubbly.

Carefully remove the stuffed chicken breasts from the air fryer and let them rest for a few minutes before serving. Serve with your favorite toppings such as salsa, sour cream, guacamole, and chopped cilantro.
