Ingredients
– 2 ripe avocados, peeled and pitted – 2 cups buttermilk – 1/4 cup chopped fresh cilantro – 1/4 cup chopped green onion – 1 small jalapeño, seeded and chopped (optional for heat) – Juice of 1 lime – Salt and pepper to taste
In a blender, combine the avocados, buttermilk, cilantro, green onions, jalapeño (if using),.
And lime juice. Blend until smooth.
Season the soup with salt and pepper to taste.
If the soup is too thick, you can thin it out with a bit of water or more buttermilk.
Chill the soup in the refrigerator for at least 1 hour before serving.
