Blackberry Peach Galette Recipe

Best late-summer Blackberry Peach Galette. Buttery puff pastry with blackberries, peaches, brown sugar, and honey. This simple galette is summer fun. Delicious, easy, and always pretty baked. The fruit-filled galette complements the ice cream scoop.

– 1 cup fresh blackberrie – 1/4 cup brown sugar – 1 tablespoon cornstarch – 2 teaspoons vanilla extract – 1 sheet frozen puff pastry, thawed – 1-2 peaches, thinly sliced – 2 tablespoons honey or pure maple syrup – 2 tablespoons salted butter – 1 egg, beaten – Coarse sugar, for sprinkling

Heat the oven to 375°F. Mix blackberries, brown sugar, cornstarch, and vanilla in a medium basin.

Roll puff pastry into a 1/4-inch rectangle on a lightly floured surface. Place the pastry on a parchment-lined baking sheet and cover with blackberries, leaving a 1-inch border.

Place peaches on top. Melt honey and butter in a small saucepan. Drizzle peaches with mixture.

Fold pastry edges over fruit. Egg-wash and sugar the pastry edges. Bake till golden brown, 25-30 minutes.

Dark edges are fine. Cool somewhat and serve with ice cream. Enjoy!
