Preheat the oven to 250°F.
In a small bowl mix the sugar, cinnamon, and salt together.
Whisk the egg white and vanilla in a large mixing basin until the mixture is frothy.
Toss the walnuts into the frothy egg whites. After that, incorporate the sugar mixture into the walnuts and combine until each walnut is uniformly coated.
Spread the walnuts in an even layer on a baking tray. Bake, or until browned, for one hour. Stir the walnuts on a regular basis of every 20 minutes.
