Easy Brown Sugar Strawberry Cobbler is great with spring strawberries. Each spoonful has luscious strawberries, creamy butter, vanilla, and just enough brown sugar to sweeten. Buttery oats, luscious strawberries, and crisp topping. Strawberry cobbler with vanilla ice cream is delicious!
Ingredient
– 1 1/2 sticks (12 tablespoons) cold salted butter– 1 cup whole wheat pastry flour (or all-purpose flour)– 1/2 cup old fashioned oat– 1/2 cup light or dark brown sugar– 2 teaspoons baking powder– 1/2 teaspoon kosher salt– 1 cup milk– 1 tablespoon vanilla extract– 6-7 cups sliced strawberrie– 2 tablespoons maple syrup or additional brown sugar– 2 teaspoons arrowroot powder

Heat the oven to 375°F. Melt 8 tablespoons of butter in a 9x13” baking dish for 10 minutes in the oven.

Make batter. Mix flour, oats, 1/2 cup brown sugar, baking powder, and salt. Include 4 tablespoons grated/shredded butter.

Mix milk and vanilla just until mixed. Toss strawberries with maple syrup and cornstarch in a bowl.

Place 3/4 of the strawberries on the melted butter in the baking dish. Do not whisk when you pour the batter overtop.

Cover batter with remaining strawberries. Bake 45–50 minutes until the center is firm and edges golden.

Use ice cream and maple butter to top the cobbler warm or room temperature.
