1 cup cornmeal 1 cup all-purpose flour 1/4 cup granulated sugar (adjust according to taste) 1 tablespoon baking powder 1/2 teaspoon salt 1 cup milk 1/4 cup melted butter or vegetable oil 2 large eggs
1. Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or line it with parchment paper.
In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, melted butter or oil, and eggs until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake for 20-25 minutes or until the cornbread is golden brown on top and a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the pan for a few minutes before slicing and serving.
