Preheat your oven to 350°F (175°C).
In a large bowl, combine the mashed bananas, crushed pineapple, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
If using, gently fold in the chopped macadamia nuts and shredded coconut until evenly distributed throughout the batter.

Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
