Preheat the oven to 350°F.
Prepare a baking tray in advance by lining it with parchment paper.
Melt butter in a receptacle that is microwave-safe. Stir in the sugar until combined. Mix in the beaten egg thoroughly. Add baking powder, cereals, flour, vanilla, and salt to the mixture. Combine by combining.
Leaving space for the cookies to spread, drop teaspoonfuls of dough onto the prepared baking tray (we placed six cookies on a sheet).
Bake the cookies for 8 to 9 minutes, or until the edges begin to darken. Allow to fully chill prior to removing from parchment paper.
