Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook for about 5-6 minutes per side, or until browned and cooked through. Remove the patties from the skillet and set aside.
In the same skillet, add the cream of mushroom soup, beef broth, water, and sliced mushrooms. Stir to combine and bring to a simmer.
Reduce the heat to low and return the Salisbury steak patties to the skillet. Spoon some of the gravy over the patties. Cover and simmer for 10-15 minutes, stirring occasionally, until the patties are heated through and the gravy has thickened.
