This grain-free, paleo-friendly, soy-free, and refined sugar-free sesame garlic meatball recipe is delicious. Easy to make for a stunning appetizer or main!
INGREDIENT
Meatballs:– 1 pound ground beef– ⅓ cup tapioca flour*– 2 green onions finely chopped– 1 clove garlic minced– 1 Tbsp fresh ginger peeled and grated, optional– ½ tsp sea salt– ¼ tsp black pepper– 2 Tbsp avocado oil for cookingSesame Garlic Sauce:– 1 Tbsp sesame oil– ⅓ cup coconut aminos– 2 Tbsp rice vinegar or lime juice– 2 cloves garlic minced– 2 tsp sriracha optional
INSTRUCTIONS
Mix sesame garlic sauce ingredients in a small bowl or cup. Hold until use. Mix meatball ingredients in a large bowl.
Step 1
Mash the ingredients by hand to coat the meatballs. The eclectic mixer paddle attachment mixes meatballs.
Step 2
Make 14 equal-sized meatballs from the mixture. A cookie scoop works, but I prefer hand-rolling the meatballs to keep them together.
Step 3
Heat two to three tablespoons avocado oil in a large skillet on high. A large cast iron skillet works as well as my 12-inch nonstick skillet. Sizzle oil for a few minutes.
Step 4
Sear the meatballs in one layer on the hot skillet for 2 minutes. Turn meatballs and brown 2 more minutes.
Step 5
Pour sauce into skillet. Instantly boil. Reduce heat to medium-high or medium if mixture gets out of control.
Step 6
Cook the meatballs for 2-3 minutes or until the sauce thickens, turning once or twice. A meat thermometer measures meatball centers' temperature. I keep well-done beef juicy by cooking it at 160��F.
Step 7
Serve meatballs with sides for starters or mains. Add sesame seeds and green onions if desired. Brown rice, sauteed vegetables, and meatballs complete the meal.
