Preheating the oven to 400°F is required.
Using a spatula, remove the flesh from the interior of the zucchini and reserve it for later use; do not discard. The zucchini should be placed in a 9 by 13 pan.
Place sausage and garlic in a medium saucepan coated with olive oil. Zucchini flesh, onion powder, tomatoes, salt, and pepper are added. Cook for four to five minutes.
Pour this mixture into each canoe made of zucchini. Add cheese and breadcrumbs as a topping. Cook for twenty to twenty-two minutes.
